Ingredients

Roasted Lamb

  • 2kg leg of lamb or supermarket pre marinated roast
  • 1/4 cup olive oil
  • 1 tablespoon chopped fresh rosemary leaves
  • 2 garlic cloves, crushed


Lemon roasted Potatoes

  • 6 washed Medium Size Potatoes
  • Keens curry powder
  • 1 lemon
  • 2 tbs Olive Oil
  • Italian herbs seasoning
  • Salt and Pepper

 

Method

Roasted Lamb

  1. Preheat oven to 180˚C
  2. Place lamb on rack or pan.
  3. Combine oil, rosemary and garlic in a bowl.
  4. Rub half the oil mixture over lamb.
  5. Season with salt and pepper.
  6. Place in oven, General rule is 55 mins per 500g
  7. Once cooked let rest for 10 mins
  8. Slice and serve with desired sides.

Lemon roasted Potatoes

  1. Preheat the oven to 220˚C
  2. Cut the potatoes into wedges and place into a large mixing bowl.
  3. Sprinkle in curry powder to taste
  4. Sprinkle in italian seasoning to taste
  5. Pour over the olive oil
  6. Season with salt and pepper
  7. Squeeze in lemon juice
  8. Toss potatoes around ensuring all are well coated in the flavouring
  9. Place on wire rack with the narrow tips pointing up
  10. Drizzle over any remaining flavouring juices
  11. Place in hot oven for about 45 mins until they are crispy on the tips but fluffy on the inside
